Clover Sprouts are naturally low in calories with a 100 g (a little less than 4 oz.) serving containing only 23 calories. You will also find 4 g of protein, 2 g of carbs, 2 g of fiber and less that 1 g of fat  plus 32 mg of calcium, 0.96 mg of iron, 36 mcg of folate and 155 IU of vitamin A.

Of all the sprout varieties out there, clover sprouts have the most substantial source of dietary isoflavones which are potent cancer fighters. Researcher James Duke, Ph.D. found an anticancer compound called genistein in the sprouted seeds of clover. Genistein actually prevents new blood vessels from forming inside of cancerous tumors which in effect starves the cancer cells.

Red clover sprouts are one of the oldest remedies used against cancer with over 33 cultures using the sprouts against it. It is not beneficial for all cancer patients though. Breast cancer patients should avoid red clover sprouts if they are taking a drug called tamoxifen. The reasoning behind this is red clover sprouts contain phytoestrogenic compounds and tamoxifen prevents estrogen from reaching tumors which may cause red clover to feed an estrogen dependent tumor.

The phyotestrogens available in sprouted red clover seeds may take part in helping to prevent menopausal symptoms, osteoporosis, cancer and heart disease.

Aside from all of the great health benefits and nutrition clover sprouts are a great addition to sandwiches and salads.


Growing direction in quart jars:

  • Soak 1 to 4 tablespoons of red clover sprouting seed (no more than 1 to 2 hours)
  • Drain water and rinse
  • Slant jar so excess water can drain off
  • Keep jar in a dark area (they will grow faster)
  • Rinse a minimum of 2 times per day
  • Once mature (usually 4 to 5 days) you can green up
  • Enjoy!
