Of all the sprout varieties out there, clover sprouts have the most substantial source of dietary isoflavones which are potent cancer fighters. Researcher James Duke, Ph.D. found an anticancer compound called genistein in the sprouted seeds of clover. Genistein actually prevents new blood vessels from forming inside of cancerous tumors which in effect starves the cancer cells.

Clover sprouts are one of the oldest remedies used against cancer with over 33 cultures using the sprouts against it. It is not beneficial for all cancer patients though. Breast cancer patients should avoid red clover sprouts if they are taking a drug called tamoxifen. The reasoning behind this is clover sprouts contain phytoestrogenic compounds and tamoxifen prevents estrogen from reaching tumors which may cause red clover to feed an estrogen dependent tumor.

The phyotestrogens available in sprouted clover seeds may take part in helping to prevent menopausal symptoms, osteoporosis, cancer and heart disease.

Aside from all of the great health benefits and nutrition clover sprouts are a great addition to sandwiches and salads.
